| 520 | _aAbstract: Non-acid unstable milk (LINA) is defined as the product that presents milk casein instability to the alcohol test, promoting the formation of lumps and indicating false acidity. The LINA is a serious problem, because the false positive, leads to condemnation of the milk, promoting waste, affecting the industry and mainly the rural producer. The inability to use this product is mainly characterized by not resisting high temperatures. The objective of this work was to verify the incidence of non - acidic milk (LINA) in the municipality of Sena Madureira - AC and to evaluate its physicochemical composition. Samples of milk delivered to dairy of the municipality of 19 milk production units (UPL) were collected during 20 days in August and September of 2018. The values of fat, protein and lactose were determined from the samples collected. The stability of the milk was evaluated by the alcohol test (v / v), while the acidity was measured by titration, obtaining the acidity in degrees Dornic (ºD), and the samples were classified according to their acidity in: alkaline (<14 ° D), normal (from 14 to 18 ° D) and acidic (> 18 ° D). Samples that presented normal acidity and positivity to the 72% (v/v) alcohol test were considered as LINA milk. The results were submitted to analysis of variance, to compare the means of the components of the LINA milk and the normal milk. Most of the analyzed samples (69%) were characterized as normal milk 23% of the samples were LINA, 6% acidic milk and 2% basic milk. It found a significant difference in the chemical composition between LINA and normal milk only for fat content, 4.48% and 3.75%, respectively. It is concluded, therefore, that there is incidence of LINA in the municipality of Sena Madureira - AC, thus, more studies are needed to deepen the subject in order to identify the origin of the problem and thus seek a solution to avoid the damages caused by discarding milk for both industry and producers. | ||
