520 _aIntegrating the fruit growing sector in the State of Acre, banana production in the Juruá Valley has stood out as one of the most significant activities of economic importance for the region. However, it is not observed in the local market the availability of processed products based on this fruit tree that contribute in an effective way to the promotion of its consumption, either through products benefited from the fruit and / or containing it in its formulation. Initiatives to modify this scenario have been adopted by local cooperatives in the Municipality of Rodrigues Alves, where producers are being encouraged to perform pre-processing and processing activities. Initially, a preliminary survey of data on the demand for local production was carried out at the Cooperativa dos Productores Mãos Unidas da Praia da Amizade (COOPERBAN), located in the municipality of Rodrigues Alves - AC, aiming to attend to its Products to be produced. The present proposal refers to an action of technology transfer and innovation through the capacitation for the processing of banana as main component and / or as an integral part of the formulation, aiming to promote the development of new banana products processed by COPERBAN, And evaluate their acceptance by potential consumers. The analyzes showed that, except for the banana cake in the formulation, all the other products have a positive evaluation regarding the acceptance test and the buying attitude of the evaluators varying according to the age groups evaluated.KEY WORDS: Agroindustry processing Acceptance test.
